Ingredients

Bitter gourd-500gms
Onion-1
Green Chillies-2
Chilli powder-1/2tsp
Cumin powder-1/2tsp
Turmeric-1/4tsp
Asafoetida – 1 pinch
Mustard -1/4tsp
Urad dal-1/4tsp
Cumin -1/4 tsp
Cashew nuts-15
Curry leaves few
Salt – as needed
Oil – as needed


Preparation method

  1. Boil it in a salt water and cool it.
  2. Make a slits and keep it aside.
  3. Heat a pan with oil, add mustard seeds, urad dal, cumin seeds, and red chillies and curry leaves.
  4. Once spluttered, add cashew nuts and fry it.
  5. Add chopped onions and sauté it.
  6. Add turmeric powder, hing, chilli powder and salt.
  7. Add the whole bitter gourd and fry it.
  8. Sprinkle oil, cover it and cook for 10 mins in a medium flame.
  9. Roast it evenly till it turns to light brown and crispy.
  10. Serve it hot with rice, sambar /rasam.
