Fish Curry – Spices and cooking method

Fish curry is prepared using south Indian style of cooking.This is my version of cooking. Fish curry is prepared using fresh curry powder,which has been explained the video.The fish is cooked with the spices,shallots,garlic,tomato and tamarind. Adding coconut is optional.Fish curry preparing with sesame oil gives more taste and richness.For coconut based fish curry (no tamarind) coconut oil preferable.I have done 22 types of fish fry and curry recipes.you can watch recipe videos in my site. Each recipe is unique in its texture and delicious in taste.

Ingredients

Fish-1 kg

Onions- 1 medium

Shallots-20

Tomato-2 medium

Green chillies-3

Tamarind juice-1 cup

Garlic cloves-6 (optional)

Coriander leaves

Salt to taste

Sesame oil

 

For the Tadka/Tempering:

Mustard seeds-1/2 tsp

Urad dal-1/2 tsp

Red chillies-4

Curry leaves-1 spring

Fenugreek seeds-1/4 tsp

Cumin seeds-1/4 tsp

 Spices:

Turmeric -1/2 tsp

Fish Curry Powder-2tsp

Hing-1/4 tsp

Curry Powder

Red Chillies-6

Coriander seeds -5tsp

Cumin-1tsp

Peppercorns -1/2

Urad dal 1/2

Mustard -1/2

Curry leaves -3 sprig


Preparation method:

  1. Heat  a tsp of  oil in a pan and fry the spices, make a fine powder (curry powder) using blender. keep aside.
  2. Heat oil in a pan add tempering spices.
  3. Once they splutter, add chopped onions, shallots, green chillies, garlic cloves and sauté it.
  4. Add chopped tomatoes, turmeric, hing  and curry powder, mix it well.
  5. Allow it to cook for few mins.
  6. When the oil separates and gravy is thick add tamarind juice and salt.
  7. Cover it and cook for 20 mins in a medium flame.
  8. Add fish slices and cover it, simmer for 10 min.
  9. Garnish it with coriander leaves.
  10. Serve it hot with rice or idli/dosa.
