Thai Green Veg Curry

Fresh beans-200 gms
Vegetable stock-1 cup
Coconut milk-1/2 cup
Soy  sauce-1/2 tsp
Salt to taste
Fresh Coriander – 1/3 bunches

For the green Sauce:

Spring Onions-1 bunch
Yellow pepper-1
Coriander-1 bunch
Garlic cloves-4
Ginger thumb size-1
Lemon grass-1
Kaffir leaves-2
Lemon -2
Sesame oil-2 tsp
Olive oil-1 tsp

Preparation method

  1. Finely chop all the ingredients and add it to the blender.
  2. Add lemon juice, olive oil ,salt, sesame oil and blend it to a fine paste.
  3. Boil the green paste in a deep pan.
  4. Add vegetable stock, fresh beans and peas.cook it for few mins.
  5. When it boils add salt and coconut milk and boil it for 10 mins.
  6. When it’s cooked add soy sauce.
  7. Garnish it with coriander leaves.
  8. Serve it hot with rice.
