Tamarind extract-1 cup
Asafoetida-1 pinch
Turmeric powder-1/4 tsp
Salt to taste
Sugar optional-1 pinch

For the tadka

Mustard seeds-1/2 tsp
Red Chillies-2
Curry leaves-2 sprig

For the Grinding:

Grated coconut-1/2 cup
Red chillies-6
Coriander seeds-2tbsp
Cumin seeds-1/2 tsp
Black peppercorns-1/2 tsp
Curry leaves-2 sprig

Preparation method

  1. Heat oil in a pan, add the spices for grinding and saute it till it turns to brown.
  2. Make it cool and add it to the blender grind it to a coarse powder.
  3. Heat oil in a pan add mustard seeds, red chillies, curry leaves .Once they splutter add onions and saute it.
  4. Add the hing , turmeric and vegetables of your choice. mix it well.
  5. Add the grounded powder and saute it.
  6. Add the tamarind extract,water and salt.
  7. Cook it for 10 mins in a medium flame.
  8. When it is thickened,switch off the flame.
  9. Serve it hot with rice.
